In Sardinia, people greet one another with a particular wish: „A Chent'Annos“ — a hundred years. It is a wish for a long and full life, marked by health, community and good moments at the table.
With CHENTANNOS, Barbara brings to Innsbruck the Sardinia she knows and carries in her heart: the Sardinia of families, of small villages, of tables laid together, of home-baked bread, of pasta made by hand and of dishes that come about slowly and with patience.
Barbara does not simply want to make Sardinian dishes known. She wants to convey the feeling behind them.
For her, every recipe carries a story. It may speak of a family, of a feast, of childhood, of someone dearly loved, or of a particular moment lived at a table. It is precisely that memory Barbara wants to keep alive in her kitchen.
The aroma should arrive before the dish.
The taste should touch the memory.
Out of simplicity, emotion should arise.
Barbara respects the time that traditional cooking needs: work done by hand, slow cooking, sauces that develop unhurried, and simple ingredients treated with care.
For her, time is an ingredient. Not everything has to be quick. Some flavours need time to develop, to mature and to show their full character.
The name CHENTANNOS, „a hundred years“, also stands for Barbara's wish to tell of one of Sardinia's most fascinating qualities: longevity.
Sardinia is known as one of the world's Blue Zones — a region where a particular combination of diet, movement, social ties, family and way of life is associated with exceptional longevity. Our philosophy is inspired by that way of life.
For Barbara, however, the idea does not simply mean living longer. Above all it means living better.
It means rediscovering the value of real food, of nature, of family, of friendship, of community and of time spent together. And above all it means understanding the table again as an important place in life.
Barbara believes that eating together is one of the simplest and at the same time deepest forms of human companionship. At the table people meet, tell stories, laugh, remember and share something that goes far beyond the food.
„A Chent'Annos“
For curious travellers, families, friends, people meeting on business, and anyone who values authentic Sardinian cuisine. For lunch, for dinner for two, for a working meeting or a long convivial evening. Because true longevity is not only about living long, but about enjoying life.
A table, a glass of Cannonau, and a place where no one is in a hurry. A Chent'Annos.
